Chickpea Smash Over Cos Lettuce

Ingredients:

Lemon juice

Chopped parsley

1 can of chickpeas (unsalted)

Cos (or Romaine) lettuce

Directions:

Rinse chickpeas and pour into a mixing bowl.  Add a generous amount of fresh chopped parsley.  Add 1/4 cup of lemon juice.  Mash mixture together with a dash of salt.  Mix until well smashed together.

Serve over shredded cos lettuce.
