2 pounds carrots, peeled and sliced
1/3 cup red wine vinegar or cider vinegar
1/4 cup brown sugar
1 tablespoon light butter
1/4 cup chopped pecaus
1 tablespoon chopped fresh parsley
1. In a medium saucepan place carrots in lightly salted boiling water. Cook 7 to 9 minutes or until just tender; drain well.
2. Reduce heat to medium-low. Add vinegar, brown sugar, butter and pecans. Cook, stirring, until well-coated. Sprinkle with parsley and serve.
