1 cup frozen edamame, shelled
1 cup uncooked couscous
1 (3-5 oz) package of shittake mushrooms, stems removed; sliced
1/4 cup sliced green onions
1. In a medium saucepan bring 1 1/2 cups water to boil. Add edamame; cook 30 seconds. Stir in couscous; dover pan and remove from heat. Let stand for 5 to 7 minute.
2. Meanwhile, heat oil in a large skillet over medium heat. Add mushrooms; cook 3 minutes. Add 2 teaspoons of the soy sauce; cook 1 minute more.
3. Fluff couscous mixture with a fork. Gently fold in musrhooms and green onions. Stir in remaining 1 teaspoon soy sauce. Season with pepper to taste, and serve.
