Sweet Red Cabbage

4 cups red cabbage, thinly sliced

2 pears or apples, sliced

3 green onions, sliced

1 carrot, grated

1/2 cup raisins or currants

4 Tb. apple juice, or 2 Tb. agave syrup

3 Tb. olive oil

1 Tb. raw cider vinegar

1/2 tsp. dry mustard (optional)

Salt and pepper to taste

Toss all ingredients together and marinate for 2 hours at room temperature, stirring often, or overnight in the refrigerator, stirring occasionally.
