Creamy Pineapple Salads

Creamy Pineapple Sauce:

1/4 cup cashew or macadamia butter

1/4 cup pineapple juice

1 Tb. lemon juice

1/2 Tb. olive oil

2 tsp. dried dill


Creamy Pineapple Coleslaw:

2 cups shredded green cabbage

1/2 cup shredded carrots

1 cup pineapple chunks

2 Tb. chopped parsley

Creamy Pineapple sauce

Salt and pepper to taste


Pineapple Waldorf Salad:

1 chopped apple

1/2 cup pineapple chunks

3 stalks celery, sliced

3-4 scallions, chopped

1/2 cup walnuts or pecans

1/4 cup parsley, chopped

Creamy Pineapple Sauce

Salt to taste


Whisk or blend sauce ingredients together.  If using a whisk, make sure the nut butter is at room temperature.  If using a blender, add the dill last and gently pulse blend.  For very fine coleslaw, you can shred the cabbage with a food processor.  Toss all ingredients and serve fresh.  Waldorf Salad is great served on a bed of greens.
