Cool Mint Salad

1 cup chopped cucumbers

1 cup chopped tomatoes

1/3 cup chopped fresh mint

1/4 cup chopped parsley

2 Tb. lemon juice

1 Tb. olive oil

1/4 cup sprouted sunflower seeds (optional)

 

Rawesome Tabouli:

Increase chopped parsley to 1 cup

Add 1/2 recipe Sprouted Lentil Salad minus vinegar

 

Toss all ingredients and allow to marinate in the refrigerator at least one hour, stirring often.
