Chinese Celery Salad

6 stalks celery

1 cup mushroom of your choice

2 Tb. Nama Shoyu

1 Tb. raw cider vinegar

1 Tb. sesame oil

1 tsp. fresh grated ginger, or 1/4 tsp. ginger powder

Pinch of salt

Sliced Chinese cabbage and shredded carrots.

 

THinly slice the celery and toss with mushrooms, tamari, vinegar, lemon juice, ginger, and salt.  Allow to marinate for 3 hours at room temperature, stirring often, or overnight in the refrigerator, stirring occasionally.  Serve on a bed of Chinese cabbage and garnish with shredded carrots.
