Cauliflower Orange Salad

1/2 small head of cauliflower, chopped

1/2 bell pepper, chopped

1/2 cup chopped green beans or broccoli

1 1/2 cups mandarin orange segments

3 Tb. lemon juice

3 Tb. flaxssed or olive oil

1 tsp. maple syrup or honey

1/2 tsp. orange zest

Salt and black pepper to taste

Serve on a bed of spinach and garnish with chives


Toss all ingredients and allow to marinate for three hours at room temperature, stirring often, or overnight in the refrigerator, stirring occasionally.  For more portable version, skip the green beans or broccoli and add 1-2 cups of chopped spinach, allowing it to marinate and reduce within the salad.
