Creates a salad packed with essential oils.
2 ripe avocadoes
3-4 Tb. lemon juice
1 clove garlic
1 medium cucumber, peeled
1/4 cup chopped scallions OR red onion
1 Tb. Italian seasoning OR dried dill
1 ripe tomato (optional)
Blend all ingredients together, adding water to desired consistency. If using a whisk, simply replace the cucumber with enough water to thin.
