Simple Vinaigrettes

Basic Vinaigrette:

1 cup extra virgin olive oil

1/2 cup raw cider or balsamic vinegar, or a mixture

3 cloves garlic, minced, or 1/2 tsp. garlic powder

2 Tb. honey or agave syrup

1 tsp. each salt and black pepper

2 tsp. each dried oregano and basil

Dried chili peppers (optional)

Cream Vinaigrette:

Add 3-4 stalks of celery

Raspberry Vinaigrette:

1/2 Basic Vinaigrette recipe

1 pint raspberries, fresh or frozen

1/2 cup orange juice

1 chopped scallion

Marinated Mushrooms or Cherry Tomatoes:

Mushrooms or tomatoes, plus Vinaigrette to coat

Assemble in any kind of jar and shake before each use.  For the Raspberry or Creamy, use a blender.  Marinate any vegetable for three hours at room temperature, stirring often or overnight in the refrigerator, stirring occasionally.
