Velvet Pie

1 cup fine Graham cracker crumbs 1/4 cup sugar
1/8 tsp. salt
1 1/2 tsp. cinnamon

1/4 tsp. nutmeg
1 1/2 Tbs. margarine
2 Tbs. egg whites
Combine above ingredients, adding egg whites beaten with a fork last.
Line 9” buttered pie plate with mixture, bake 5 minute @ 350.
1 1/2 cup milk scalded
3 eggs separate
1/2 cup sugar
1/8 tsp. salt
1 envelope plain gelatin in 1/4 c. water
1 tsp. vanilla
1/2 cup cream, whipped
Pour scalded milk over combined egg yolk, sugar, salt. Return to double boiler, stir until coats spoon. Remove, add gelatin that has soaked 5 minutes. In 1/4 c. water-cool. When setting up, fold in beaten egg whites & vanilla, chill until beginning to set. Put into crust. Chill until set. Top with whipped cream, grate semi sweet chocolate & nuts.
