2 onions, diced
2 green peppers, diced
4 stalks of celery, diced
3 tablespoons butter
Saute above ingredients together in a large skillet. When finished sautéing, pour ingredients into a large crock pot and turn on high.
Then add to the crock pot:
2 cans of diced tomatoes
1 cup of chicken broth
1 small can of tomato paste
2 bay leaves
Saute 1 lb. of Kielbasa Sausage, sliced into half moon shapes in skillet. Then season with Tony’s Creole seasoning. Add to the crock pot.
Dice 3 chicken breast and cook in skillet with 1 clove of minted garlic. When the chicken is thoroughly cooked add to crock pot. Season the pot with Tony’s Creole Seasoning and Texas Pete to taste.
When the pot starts to bubble add:
16 oz. sliced frozen okra
4 cups of peeled cooked shrimp, diced
Turn crock pot on low and serve as soon as the Okra is heated through. Okra and shrimp are the last ingredients you should add before serving because the okra will become slimy if it over cooks and the shrimp will become tough.
THis is a large recipe that will feed your family 2-3 times. Divide into separate freezer containers for a quick, last minute meal.
Serve over a bed of rice (brown or white).
