Mom’s Homemade Chili

1 lb. red, pink or pinto beans, washed and drained (1 lb.- 2 cups) 6 cups water
2 onions, chopped
1 garlic clove, minced

2 lbs. lean ground beef
3 tsp. salt
1⁄4 tsp. pepper
1 to 3 tsp. chili powder
1⁄4 tsp. crushed red pepper 1 tsp. paprika

4 cups tomato juice
Cover beans with water, bring to boil, and boil for 2 min. Let stand for 1 hour. Cover and simmer until tender, about 2 hours. In a skillet add the meat. Cook until meat separates and browns. Add onions and garlic and cook until golden. Add with remaining ingredients to beans. Simmer, uncovered for about 1 1⁄2 hours, stirring occasionally. Makes 8 servings.
