Jack-O-Lantern Soup

2 Onion, chopped
2 cups canned Pumpkin
2 T. Whole Wheat Flour
1⁄4 tsp. ground Ginger
2 cups Skim Milk
4 cups Chicken Stock
Garnish with chives, or parsley

1. Sauté onion and stir in pumpkin.
2. Blend flour & ginger with 1/3 c. of milk. Stir into pumpkin. 3. Adding remaining milk and cook, stirring constantly. 5 to 10

minutes until thickened. Do not allow to boil. 4. Mix in chicken stock & heat almost to boiling. 5. Garnish to look like jack-o-lantern. Serve Hot. Serves 8

This was a recipe that Mom made for us in the fall. We had it a lot on Halloween night before we went out Trick-or-Treating. Mom wanted to make sure we had something warm to eat before we headed out into the cold.
