Chicken Swiss with Stuffing

1 box chicken flavored stuffing mix 1 small onion
1 carrot, grated
2 Tbsp. butter

6 chicken breasts, pounded flat 1 can cream of chicken soup
1 cup half & half or light cream 6 slices Swiss cheese

Heat oven to 350 degrees. Sauté onion and carrot in butter. Set aside. Spread dry bread crumbs in the bottom of a 9 x 13 inch pan. Top evenly with sautéed onion and carrot. Roll chicken breasts and secure with toothpick. Place on top of bread crumbs and vegetables. Sprinkle stuffing mix seasoning packet over the top of chicken.

Mix together soup and half and half. Cover chicken with soup mixture. Cover baking dish with foil and bake for 1 hour at 350. Remove from oven and place a slice of Swiss cheese over each chicken breast. Return to oven for 8 to 10 minutes, uncovered. Serve immediately Serves 6
